Coconut Frosted Orange Sponge Cake

 
 

1 9-inch tube cake

 
cake

2 whole eggs
2 egg yolks
2 cups sugar
1 teaspoon orange extract
2 cups sifted cake flour
2 teaspoon baking powder
1/2 teaspoon salt
1 cup hot milk


1 1/2 cups shreded coconut
grated rind
orange juice of 1 orange

boiled frosting

Beat 2 whole eggs and 2 egg yolks until frothy
add sugar gradually beating until lemon color
add orange extract beat well
add sifted flour with milk beating until smooth

pour batter into ungreased 9-inch tube pan and bake in moderate oven 350 for 1 hr or until done.

Invert cake on rack and allow to stand until cool before removing from pan.

While cake is cooling soak coconut in orange rind and juice.

Spread cake with frosting and cover with drained coconut

Cool oven 250°F
Slow oven 250–350°F
Moderate oven 350–375°F
Hot oven 375–450°F
